I remember visiting Ireland in the 1960's for a funeral, it was the 16th of March. We decided to stay for the week, despite bitterly cold weather conditions.

On St, Patrick's day we visited family in Cliffon, Galway. The lady of the house made Irish stew using pork ribs instead of the traditional mutton. I never tasted anything so good.

I regret not getting the recipe, If you haven't tried pork rib stew I suggest you do, better still if you know anyone with the recipe, please let me know.
