We had a kind of "Keystone Cop" operation in the kitchen this morning with juice spilled here and there as we worked, but I showed Susie how the steam juicer works. These tomatoes, for as many as you get in a flat, are mostly juice, not so much pulp, so we used the "pumpkin" setting on the food mill and she got more seeds and bits of tomato skin in a very juicy yield. She's going to cook that down into spaghetti sauce, and I suggested she freeze the gallon of juice a pint at a time and use it as stock in soups if she doesn't drink tomato juice. There were enough tomatoes left to fill one of those grocery store produce paper bags with the paper handle that she can bulk up the sauce with. Doing it this way we got rid of most of the skin and a lot of seeds and she can add in chunks. If I spot a flat of Roma tomatoes then we'll try a heftier sauce, otherwise I'm finished buying tomatoes. Next come the peaches.

I'll do peaches this evening and take a break from the hot stove for a while. Work on other things. Stay cool, Y'all.
