That's due to the fact that in German, nouns have genders (e.g. the sun is female, the moon male - it's the opposite in French). "Schatz" (meaning treasure, dear) is a male noun, therefore comes with the male pronoun "ihm" (him).

Since the song is clearly sung from a man to a woman, I wrote "him (her)" in my translation.
