I read that sweet potatoes have to sit for 2 or 3 weeks before you start using them, so I looked to see if it applied to anything else. It sounds like some squash do benefit from aging, apparently. Not needed for acorn. I love the acorn squash baked. I was out running around this evening and passed my favorite Chinese restaurant, so I picked up some soup and added it to chicken already in the fridge. I'll bake the squash tomorrow - I cut them in half and place a half open-side down on an oiled piece of foil on a pan and bake it until it soft and then scoop the pulp from the skin with a spoon. It's wonderful without anything else, though if I added one thing it would be a little butter.
