Becky, it's not being in the west, it's agri-business has taken dozens of fabulous old apple varieties out of the orchards in favour of newer. I don't recall the last time I saw a Stayman for sale -- probably 30 plus years ago when I worked at a cider mill. Might still be available in Mennonite areas of Ontario but I can't say for sure.

Fortunately there are people still growing whatever varieties will survive locally, either by experimenting themselves or from old-orchard grafts, but they're becoming more and more scarce. Another gene pool almost drained.
