Yes, a layered dish made with pancakes works OK. I'm assuming here you mean the crepe type of pancake, rather than the thicker type favoured by the Scots and, I believe, the Americans. I don't know how I would use those.

You can build a dish very similar to lasagne, simply substituting pancakes for the pasta.

You can also roll the pancakes around a filling (rather similar to rigatoni) cover in a second, different, sauce and then bake. Cheese with spinach makes a good filling, likewise shredded chicken with almonds or cashews, lentils with mushroom works well, just let your imagination have a day out.

One advantage of rolling rather than layering is ease of serving, but similar fillings work for either method. I tend to top off with a little grated cheese and breadcrumbs, it just adds a bit of texture.

I suppose you could do something similar in the sweet line if you wished. I quite fancy the idea of blackcurrants done that way, topped with ice-cream, custard, or cream according to taste. Must try it some time.
