I rarely make pancakes - they're not my favorite breakfast, but when I do I usually save some for reheating later or freezing. I find that they reheat well. I think you could definitely get away with making the pancakes at home and transporting them to the church. What I would do is make them and wrap them in batches in sheets of aluminum foil. I'd put these aluminum foil packets of pancakes in the oven to keep them hot and then when ready to transport put them in a large baking dish, insulate well and take them to the church. If it's an option, pancakes heat up pretty well in a toaster and if you have access to a couple of toasters you could probably not even worry about keeping them hot on the way. If there are no cleanup facilities because somebody else is using the kitchen - just use paper plates and plastic utensils (not very green, but you do what you have too...) Provide butter and syrup at the table.
