Boy, is THAT a needlessly complex recipe for creamed onions!

Here's what I do (same as me sainted mither before me):

Melt enough butter in a frying pan (all the measurements are going to be like this). Slice up as many onions as you want and plop 'em into the melted butter. Sautée them (Mom didn't say say sautée) until nicely yellow and limp. Sprinkle a wee bit of flour over them. (What you're doing is making a roux, but Mom didn't say that, either.) Stir so flour gets mixed into the butter without lumps. (Easier done than said, actually...) And pour in a little cream/milk/half and half, etc. until it's the right degree of creamy -- not too thick, not too thin.

That's it! No casseroles, no bread crumbs, no other shit. Salt & pepper.

Fine all by itself as a side dish (or sort of my entrée last night). Mom usually puts hers over boiled or baked potatoes (she does that with her cucumber salad, too), I discovered some years ago that creamed onions mixed in with prepared packaged mac & cheese is a guilty pleasure.

It went very nicely last night. (Rich, though, since I didn't use packaged mac & cheese.) There are leftovers.

Talked to Tom before bed last night -- going to bring a few more things over today, but probably after work rather than both fore and aft.
