I got the hankering the other day to eat some roast duck. I hadn't had any in at least 10 years (roast duck, I mean...not sex). So I figured I'd cook it myself (the duck, mean...you gotta 'splain EVERYthing here in very specific terms or some people get the wrong idea). Went out to the local grocery, bought a frozen "jeune dindon" (young French duck?), and brought it home. It took 2 whole days to thaw that duck out. Then I looked up a roast duck recipe on the Net, followed it closely, and....voila!!! I ate roast duck tonight! I had stuffed it beforehand with chopped up sweet potatoes and green onions.

Wowee!!! Really good. I am now basking in the satisfaction of a job well done and wondering what culinary heights to scale next.

Roast goose?

Ostrich?

Pheasant under glass?

I'll have to give it some careful thought.
