I came up with an excellent recipe for venison roast based on the hinese roast duck.......We call it "Peking Buck."

3-4 pound venison roast
1/2 teaspoon ground cinnamon
1 teaspoon fresh ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground white pepper
1/8 teaspoon ground cloves
3 tablespoons soy sauce
2 tablespoon honey
2 orange, sliced
1 tablespoon chopped fresh parsley

Tastes great with some plum sauce!

Also do deer like lamb which we call "Bambi Lambi." The ground deer makes great "Sloppy Doe."
