Couldn't wait for your reply Gurney so I went ahead and did it anyway.

-Boiled 2 medium size Beefsteak tomatoes(Didn't want to use my Pink variety ones as they are acid free and I just love eating them right in the garden.).
-Skinned them
-fried 3 slices of bacon. Removed them when crisp.
-drained the fat from the pan.
-added the 2 tomatoes and used a potato masher.
-Fried them till almost all the juice was gone.
-Added the bacon and mixed it up.
-Squared it off in the pan with the spatulia.

-Added a slice of cheese on it till it started melting.
-Put it on toast as a sandwich.
