My favorite poultry seasoning mixes are Herbes de Provence (thyme, marjoram, summer savory, rosemary, tarragon, basil, fennel seeds, chervil, mint, lavender flowers) and Fines Herbes (various amounts of parsley, chives, marjoram, chervil and tarragon.)
