Thanks, Don ~~ yeast, of course. Don't know where I got malt from. The flavour is savoury rather than sweet [hence the malapropicity of the jell-o suggestions]; somewhat salty and yeasty. As Don sez, that is about as far as one can go in describing a flavour, without going into the sort of silly jargon that wine correspondents tend to use.
