I finally figured out how to properly cook a duck today. The 4rth attempt. You have to cook it slooooowly. That means about 4 hours at only 300 degrees, then a quick searing at 400 for 5 to 10 minutes at the end to make the skin crispy. I also made a glaze for the skin with molasses, honey, soya sauce, and pomegranete juice. Delicious! So this time the duck turned out as it should, juicy and not dry.
