Wassailing, as in the sense of wassailing the apple trees or "apple howling", is associated with Twelfth Night or "Old Christmas". In Devon they take this one stage further and celebrate it on what would have been old Twelfth Night, round about 17th January. So it may be a little too early to wassail on New Year's Day, but it's certainly not too late.
