Rap, the pleasure of potatoes is two-fold. Eating them of course, and knowing they are organically grown, but also digging them. When one grows a modest number of potatoes so harvest isn't drudgery, it's always a pleasant surprise to pull these beautiful tubers out of the soil, especially if you have an audience who has never seen a potato in the ground before. And especially if that audience is a child (or one of my children, grown now, but who still love some harvesting in the garden.)
