For those of you wanting to grow potatoes who need a way to get started or do it in limited space, try this box that grows with the plants.

I grow the red lasota because they last longer and I like them best. It's a waxy potato that I often cut up and fry in a skillet with seasoning and olive oil, or put in soups, etc. When you grow potatoes they will sometimes emerge from the soil - keep an eye out and pile more dirt over them. When it comes time for picking any of them that have been exposed to sun will have green patches, and those green patches should be cut off before using the potato. Apparently that green part can make you a bit sick to the stomach.
