The 21st marks the Winter solstice. The next day is the first day of Winter, but it is also the day when the days begin to lengthen again. The trees remain fully dormant until the 25th, when the days have lengthened enough to cause the sap to begin moving again. This is the reason for the Christmas tree of the Druids, the Saturnalia of the Romans and the birthday celebration of Jesus chosen by the Christians. The 25th is the harbinger of Spring.
