Ed T and Janie- Yes, Yukon Gold is much like the thin-skinned reds; if we can't get one we use the other. I can't remember the names, so go by appearance and feel.
We are getting organic potatoes in all our markets now.

It's been a long time since we had the thicker-skinned "Idaho" or baking potatoes at home, but we sometimes order them in restaurants, where we mix the butter and goodies into the shell..

And are potato salad makers divided into those that add and don't add egg?

Somewhere I've got a Greek potato salad with Kalamata olives- have to dig it out.
