Most UK common or garden potato salad consists of covering them in mayonnaise and cut chives.

I tend to start there and get creative depending on guests. Certainly a bit of English mustard powder in the mayonnaise and seasoning the spuds before making it up. It tends to be a feature of BBQ for us. Rather than one dish with all sorts, we tend to do different dishes.
