That is the best news I've had all day, thanks! You and Pat will be tired for some time to come, so home health care is a good idea...and I do hope physical therapy will enter into the picture. Wonderful news for you both.

I'm guessing both spanakopita and baklava would only be sold cooked. I can't imagine why they would have been frozen before cooking, but even if they were for convenience in preparing for the holiday, there would be no reason they couldn't be refrozen unless exposed to unsafe temperatures at some point. re: Refreezing cooked foods "...After cooking raw foods which were previously frozen, it is safe to freeze the cooked foods.
