I'm guessing both spanakopita and baklava would only be sold cooked. I can't imagine why they would have been frozen before cooking, but even if they were for convenience in preparing for the holiday, there would be no reason they couldn't be refrozen unless exposed to unsafe temperatures at some point. re: Refreezing cooked foods "...After cooking raw foods which were previously frozen, it is safe to freeze the cooked foods.
