The words symbolise Demelzas strength of spirit and character, how she is truly devoted to Poldark. She would pluck a rose for her love, but should she pluck her finger on a Thorne and it bleeds she would still pluck her bleeding finger again to prove her love. This is emphased again in the second part of the lyric.
