Troll, I make cornbread from scratch in my iron skillet! Ever used blue cornmeal? Awesome! I will admit to using cornbread in a box once in a while, though - it's cheap and works great after a long day at work when you don't feel like washing a bunch of mixing bowls. :)I also like to make hoecakes - cornmeal, an egg, a little milk. Fry em up in the skillet. Yum!
