I'm fond of a simple one, where I peel and roast about a pound of tomatillos, along with about two dozen cloves garlic (peel these after roasting( put em in a food processor with a couple of chipotles in adobo sauce (the more chipotles the hotter the salsa) and a bit of sugar and puree. Mmmmm.
