My dad was a mighty pheasant hunter at one time, and my mom had to find all sorts of different ways to prepare the things. The best was a thing called "pheasant Paprikas" which involved a HUGE amount of sweet paprika, onions, some broth, and cooking a long time. Just before serving you added a big dollop of sour cream. Serve over egg noodles. Fabulous.I was the only kid at my Middle School who regularly brought Pheasant Salad Sandwiches in his brown-bag during hunting season.
