Here's another use for that shark (or any other fish, like sardines and mackerel and crappie):
Cut a pound of whole fish (bones and guts and all) into 1" pieces and add to a big jar.
Mash fish into a slurry with a potato masher or mortar or your hands (if the last, rubber gloves are recommned).
Smash a whole bunch of peeled garlic cloves by pressing under the blade of a wide knife or something. Add to jar.
Grate or peel a lemon and add lemon peel to jar.
Add a lot of crushed peppercorns, a couple of bay leaves, a cup of salt, and enough water to jar to cover fish completely. Mix well.
Cover tightly with lid. Let it work (don't mix it!) for 12 weeks to a year. Filter before using, if you do.
