I remember that one......the words were "Hen, chicken, rooster, pullet", definitely pulling the nose on "pullet". It wasn't just in America, it was in a country town in Oz too.

But apart from pulling the nose I can't remember what else was tapped! We played it in primary (elementary) school in the playground so were 8-12 years old.
