You could try Musescore Joe. It's what I use for scoring on my Linux maching (I have a copy of Finale on my virtual XP machine, but these days I only use that to export old Finale files to MusicXML to transfer them). It's a general scoring program and can export MIDI. Avaiable for Windows/Mac/Linux.
