Also, I've probably said this on Mudcat before, possibly in the recipe thread, but do you know you can use the bean water from a can of chickpeas or butter beans or white beans etc as a substitute for egg white? It's known as aquafaba i.e. bean water, if you want to look up recipes.

I made some very yummy meringues with them, took them to a family lunch and no one could tell the difference. The possibilities are amazing.
