A favourite of mine, I remember it from the K Tel album

Black water haddie lived back in the swamp
Where the strange green reptiles crawl
Snakes hang thick from the cypress trees
Like sausage on a smoke house wall
Now the swamp is alive with a thousand eyes
and all of em watching you
Stay of the track of haddies shack
In the back of the black Bayou

Way down the road from haddies shack
Lay a sleepy little okachoga town
Talk of swamp witch haddy
Locked you in when the sun go down!
Now, rumors of what she done,
and rumors of what she do
Kept folks off the track, of haddies shack
In the back of the black bayou.

One day brought the rain, the rain stayed on
And the swamp water overflowed
Skeeters and the feaer grabbed the town like a fist!
Doc Jackson was the first to go.
Now some said the plague was brought by haddy
There was talk of a hanging too
But the talk got shackled,
By the howls and the cackles
From the back of the black bayou

Early next morn between dark and dawn
When shadows filled the sky
There came an unseen caller
To the town where, hope'd run dry
In the square there was found
A big black round, Vat full of gurgling brew
Whispering sounds as the folks gatherred round
It came from the black Bayou!

Well there aint much pride
When you're trapped inside a slowly sinking ship.
They scooped up the liquid, deep and green
And the whole town took a sip...
Then the very next day the fever went away
And the skies again were blue
Let's thank old haddy for saving our town
We'll fetch her from the black bayou!

Party of ten of the town's best men
Headed for haddy's shack
They said "Swamp witch magic was useful and good"
and they gonna bring haddy back.
Never found haddy, never found her shack
And they never made a trip back in
There was a parchment note
They found tacked to a stump
Said "Don't come lookin again!"


at least thats how I remember it.
