A "Jaw" is a coin purse, or small purse with a rigid jaw opening mechanism akin to a woman's purse . In the era before wallets, a cow puncher would carry his cash in his jaw and the jaw in his coat or vest pocket, not in a hip pocket. A rounder like Diamond Joe would obviously have a diamond studded jaw. Google "antique jaw coin purse" for images.
