I invented a tangy side dish to go with meat loaf.

Black bean salad

Drain but do not rinse one 15-oz can black beans
Make dressing: Put in a medium-size bowl and whisk well.
2 T veg oil
1 T apple cider vinegar         
1/2 t dried leaf oregano
a few grinds of black pepper
1/4 t mayonnaise (optional, aids mixing)


Chop finely 1/4 cup yellow onion
Chop coarsely 6-8 cherry tomatoes or one medium-size tomato

Mix all together. It is better to make this ahead so the flavors can blend.
