The terroir of regional wines is unmistakable, and I imagine if the cows are all local, artisanal cheese might be as well.

Mass production cuts corners in the name of profit and it blends flavors to find a standardized set to sell year round. We've become spoiled by the marketplace having seasonal stuff all seasons.
