Here in east coast Oz, I am happy to report that somehow the weather gods have worked together and we finally - after 25 years - had a good sized crop of avocados on the tree I grew from seed.

I posted more info on the "What's the weather like" thread, and also remembered it was more like 18 to 20 years ago that I sprouted the seed.

But then I started rabbiting on about my favourite ways to eat avocado so I thought I should talk about that in this recipe thread instead.

The tree is a Shepard avocado it is my favourite variety. The flesh stays green and soft for a few days, and has a lovely flavour.

My fave breakfast is fried bacon bits on wholegrain toast covered in a thick layer of avocado. Maybe feta or fried cubes of halloumi or tofu might do the trick too if you don't eat bacon.

Another fave is chicken breast, avocado, sun dried tomato strips and flash-fried-then-steamed asparagus - or even tinned asparagus which I usually prefer not to eat because the flavour is nothing like the fresh asparagus.

To flash fry/steam the fresh asparagus I fry them with a bit of olive oil for about one minute on mid-to-high heat, turn them in the pan, fry for another minute, have a pan lid ready, throw about a tablespoon of water in, bang the lid on, steam for about a minute et voilĂ ! Done!
