I'm just a junior lighting/sound designer, I'm afraid...still learning. Also, most of the stuff I've worked with is theatre, not mobile setups. So I can't help a -whole- lot with your question. What I -can- say is to go with something very versatile and get a flexible lighting tech. If you're going to be taking stuff on the road, you're not going to be able to create the same look everywhere; you've got to have crew and equipment that can adapt to a lot of different places. Lighting trees are good to have--they'll allow you to hang in places where you can't hang overhead. As for what instruments to use, a lot depends on what you can afford. I'm personally fond of Source 4 pars and leekos. ETC's Intellibeams are really nifty, but mondo expensive and probably more technology than you need. *grins* Actually, they're more technology than anybody but, say, Mick Jagger needs. But they're neat.
