Freshly laid eggs from chickens kept in a clean area are generally OK out of the fridge for a bit but only if they are not washed. The eggs come out sealed with a film that helps make the eggshell less porous. It's the porosity of the shell that is the problem. The salmonella starts on the outside of the shell but migrates in through the shell as moisture is drawn in through the shell, and then multiplies inside the shell on the rich growing medium. This is why one never washes farm eggs until ready to use them, if at all.
