Sorcha - That's it. I had bought a plant at a flea market and just stuck in a sort of out-of-the-way spot out back, and forgot about it, till the urge to make the chili came on me. Photo and all- Epazote. First time I recall using it. It adds a nice flavor. I got it out of the fridge earlier, and added another ingredient I overlooked yesterday - chopped green chilies (the mild variety). That seemed to bring it all together. Of course, just sitting in the fridge overnight didn't hurt either. Best thing about it - it's on the diet, with very low carbohydrates. Looks like I've got about a two-day supply, if my back-at-home lad doesn't find it first. Thanks to all.
