For those of you who ended up eating dried up turkey and/or ham, here's the menu for the holidays that we enjoyed at Moon on the Hill -- just a sampling, in case any of you 'Catters ever mosey on down Texas way and want to stop in for nosh ;-)Christmas Supper (prepared to the sounds of Nat King Cole and Mannheim Steamroller):
Roast Goose with apple and prune stuffing
Roast Turkey with cornbread, apple and currant dressing; basted with melted butter and honey
Áine's Country Carrots - baby carrots, diced celery and purple onion; sauteed in butter and white wine, and baked with butter and whole wheat bread crumbs on top
Zucchini Italiano - zucchini, purple onion, plum tomatoes sauteed in butter and white wine, baked with a topping of parmesian and shredded mozarella cheese
Broccoli and Mushroom Casserole, mushrooms sauteed with chopped scallions in white wine, topped with melted provolone cheese
Garden Salad served with croutons and homemade balsamic vinegrette dressing
Homemade French Bread with egg and sea salt glaze
Áine's Apple-Raisin-Cranberry pie, served with melted sharp cheddar cheese
Homemade Amaretto Chocolate Raspberry Cream Cake - three layer cake white cake, interspersed with fluffy white cream icing, frosted light chocolate and topped with raspberries
Homemade Cheesecake with Graham Cracker Crust - 'nuff said
Coffee (a homemade blend of Guatemalan coffee beans and caramelised pecans ground together) topped with freshly whipped cream, and served with amaretto and white chocolate filled wafers
Boxing Day (prepared to the sounds of Beau Soleil and various unheard of Cajun bands from Southern Louisiana):
Seafood Gumbo served atop basmati rice

Homemade Four Cheese Cornbread
Day Before New Year's Eve (prepared to the sounds of Altan, Clannad, and various traditional Irish bands):
Linguini Alfredo - with homemade linguini noodles
Homemade Focaccia Bread served with balsamic vinegrette

New Year's Eve (prepared to the sounds of various Bosa Nova bands):
Klops (Jewish-American meatloaf) - ground chuck and veal meatloaf
Potatoes Romanoff - shredded red potatoes, sour cream, sharp cheddar cheese and green onions
Green Beans and Mushrooms - thinly sliced fresh green beans baked with mushrooms sauteed in butter and white wine
Homemade Whole Wheat Bread
New Year's Day (to be prepared to the sounds of Willie Nelson, Merle Haggard, Dollie Parton (the bluegrass CDs) and various extremely talented Mudcatters - you know who you are!):

(Supper) Maple-Mustard Pork Tenderloins with Caramelised Apples
Black-Eyed Peas with bacon and savory leaves, and celery, purple onion, roasted garlic, carrots, bell pepper and jalepeno pepper sauteed in white wine
Corn on the Cob with herbed butter
Homemade Jalapeno Cornbread
