Basic Yaller Corncake 3/4 cup corn meal 1 cup flour 1/3 cup sugar 3 tsp. baking powder 3/4 tsp salt 1 cup milk 1 egg, well-beaten (use fork, none of those frenchy things) 2 tbsp shortening, melted* Mix and sift dry ingredients; add milk, egg and shortening; bake in shallow buttered pan for abt. 20 minutes at 425 degrees F. *butter, chicken fat, drippings
