Scrapple is terrific. I enjoy making it for house guests. I just make corn meal mush and add plenty of Jimmy Dean's pork sausage cooked up in small pieces. I put it in old half galon milk cartons to set up.As Uncle_DaveO says, you just slice it and fry it in a pan. Best served with pure maple syrup.
In the bad old days, they's keep a big crock of mush ouside the back door during the cold months and add all the hog scraps into the jar. When they wanted scrapple, they'd just carve some out and fry it up.
