The Polynesian Cultural Center is in La'ie, which is on the north side of the island of O'ahu, not near Waikiki (well, true, it's "near" compared with Philadelphia or France!), and it is quite touristy. There's lots of good, real Hawaiian music around the islands, if you dig a little deeper...the Honolulu Weekly has a good calendar for O'ahu, and you can also find it on Maui and on the Big Island of Hawai'i. If you ever get back here again, be sure to check it out.
