LUMBERJACK   CAKE (the best!!!)**

Cake Ingredients :
Flour - 1 and a 1/2 cups Plain (I use organic unbleached)
Bicarbonate of Soda - 1 tsp
Sugar - 1 cup (but I prefer half cup Dark Brown, instead)
Mixed Spice - 1 tsp (also my option)
Dates - 1 cup (200g), pitted and chopped
**Apples - 2 large (400g), finely chopped (I use Granny Smiths)
Eggs - 1
Butter - 125g
Vanilla Essence - 1 tsp
Water - 1 cup, boiling
Topping Ingredients :
Sugar - 1/2 cup Brown, firmly packed
Coconut - 2/3 cup, shredded
Butter - 60g
Milk - 1/2 cup

Cake Method :
Grease a deep 19cm square cake tin and line base with paper, then grease paper. Combine apples, dates, soda, and water in a bowl and stand until warm. Beat butter, vanilla, and sugar in a small bowl, preferably with electric mixer, until light and creamy. Add egg, beat until combined. Transfer mixture to larger bowl, stir in sifted flour alternately with apple mixture and pour into prepared tin.
Bake in moderate oven (170 degrees C.) for 50 minutes.
Meanwhile, make Topping then spread over cake and bake another 30 minutes, or until topping is golden brown.

Topping Method :
Combine butter, sugar, milk, and coconut in pan and stir over low heat until butter is melted and sugar is dissolved.

Cool in tin. Serve with cream.
Suitable to freeze, not suitable to microwave, recipe can be made a week ahead.

I guarantee that this recipe is worth the effort, "or your money back" !!!

**(When I made this recently, I actually used 400g of chopped apples, rather than 400g of apples, then peeled and cored - which made it wetter and more "pudding-ey"!!)
