Wow, that sounds like a feast fit for kings. And a nice family gathering too.
I did not have Easter dinner anywhere (this thread has taken a sharp left turn but who cares? Mudcatters seem to love to discuss food!), but I did eat pork for dinner which in many households is traditional at Easter (a standing pork roast or roasted or grilled pork loin is fine fare).

Here's a nice tip for pork chops: marinate them overnight in Annie's Honey Mustard dressing. Yum. Annie's makes great all-natural salad dressings which make excellent marinades. try the Organic Green Garlic, too.

For summer: marinate a pork loin in the best barbecue sauce you can make/buy. Grill on HOT grill until slightly blackened on the outside; don't overcook! The very center (diameter of a quarter) can be ever so slightly pink...
