More than anything else it is the yeast that gives raised donuts their flavor (not counting whatever stuff you dip them in or stuff them with). On the other hand, cake donuts get most of their flavor from the grease in which they are fried. They soak up an amazing amount of grease while in the fryer. If you can ever grab one before it cools and squish it in your hand, you'll see just what I mean. Nonetheless, a plain, cake donut is still my very favorite!
