This may not be quite as early as you are looking for (1500--1561), and it's strictly instrumental, but Luis Milan wrote a whole batch of stuff for the vihuela de mano, an instrument that is a pretty obvious precursor to the classic guitar. Here's a picture of an authentic looking replica.

Luis Milan's music is playable directly on the guitar, and for a fairly advanced beginner or an intermediate classic guitar student, they aren't that difficult and they sound great. Very impressive. They're for real. I think there might be tablature available for those who don't read music. A lot of music for the lute and the vihuela de mano was originally written in tablature anyway.
