I must also recommend two recent Disney animations which did not get very good promotion: Atlantis and Treasure Planet. Both should appeal to adults very much! And, it's not Disney or Pixar, but Spirited Away is a must-see...
I loved Finding Nemo; there were some rather poignant moments amid the hilarity, I thought...as when the whales (who are translated by Dorrie, whose memory skills do extend to knowing how to speak whale language) tell Nemo and his dad to "let go, everything will be all right" and this seems to me to be a a commentary on death and dying as much as on taking risks...I thought this a very profound use of the whales, a wise and dying species, for this story. I was surprised, with so many moments focusing on different species' specific characteristics, there was nothing about dolphins...or did I miss something?
