I have a loquat tree (known as biwa in Hawaii - I didn't know that, and also Japanese plums etc) and the fruit is just starting to ripen. I don't use them much although I have started eating them off the tree.
I was wondering whether the Mudcat cooking brigade can offer me any yummy recipes for using them. I've done a bit of a recipe search on the 'Net and found a few recipes for jam, jelly, sauces for meats, ice cream topping, etc but I'm sure you guys will have lots of lovely variations for these recipes and some new ones besides.
I didn't realise that they are considered a bit of a luxury in some places. I also didn't know that the leaves can be used for tea which is believed to have some health giving properties, and that some people claim that loquats or their seeds (caution: too many can be fatal) or the leaves may assist in treating some forms of cancer.
