most fruit can be prevented from discoloring by dipping or soaking in lemon juice - this keeps it form oxidizing and turning brown. plus adds a tangy taste...yes the fruit ripens early..with cherries, strawberries and apricots. my trees were grown from pits from trees in Berkeley--s.f. bay area...hope they will bear fruit at 2800 ft.
