I'm supposed to come up with a recipe for punch to serve 200 people. This is an organic, non-alcoholic, Polish wedding, so we have 48 bottles of sparkling cider for the toast - but that's not enough to accompany the entire meal and whatnot. I think I saw a punch that consisted of pouring 7-Up over a chunk of sherbet. If I can't come up with something else, I'm going to jazz that up by adding partly-thawed frozen strawberries. It would be nice to have options. Anybody got suggestions? Please make it easy-to-make and non-alcoholic. Thanks. -Joe Bridegroom- |

(use about a pint total) This makes about a gallon - which I believe is supposed to allow about 25 portions. So you'd need 8 times the amount. |

Don't let the sherbet sit in the punch bowl long enough to chill it and then pour hot 7-up or ginger ale over it. The rapid change in temp will crack it. You can use all kinds of ideas for sherbet, 7-up, ginger ale, frozen fruit. It's nice to have an extra frozen fruit juice ring to add when the mixture starts getting warm.

Sherbet is optional. Since you have to serve so many, you might try a couple of different kinds. Ocean Spray makes some great flavor combinations and if you have a Sam's or a Costco near you, you can probably get them (and other juices, and the carbonated stuff) in bulk and save a little money. Also, for military ceremonies, they'd make a gross looking substance (try cola for a brown color) they called "grog," put it in a clean toilet bowl and float a few milk duds, and...whoops, sorry - totally inappropriate! I recommend them; unlike sherbet, they keep the punch colder for a longer time, and the punch doesn't get that furry, scungy look as the ring melts. |

Does the word zbrovka have any meaning for you? As far as I know, any Eastern European (Polish, Czech, Russian) occasion requires at least three meats, including the home made saugage, and a bottle of whisky and a bottle of vodka on each table. Not even tea-totalers may refuse a shot or two at a Polish wedding. <g> Of this would be my recipe for punch but multiply everything times three or four hundred and serve out of large bowls. Sherbet, as we know it here in the US, has a very small amount of milkfat in it, which keeps it soft and creamy (and makes that fuzzy scum in the punch bowl when it melts). Sorbet is fruit juice, sugar and water, no dairy atall, which is why it's usually hard as a rock and impossible to scoop. Unless you buy Edy's. :-) |

As to the punch, you've received lots of good recipes...but to me the addition of sherbet to punch for adults makes it too sickly sweet (and doesn't do much for it asthetically, either). Sorbet is a better choice but too expensive for 200 people! If you use something like cranberry as a base, which is refreshing without being sticky sweet, and add a combo of sparkling water and ginger ale it will be pretty and go with everything. Just my 2 cents. |
