That's a song that makes me hungry to my soul.
January is the best time of year for a good smoked country ham, but any time will do. I prefer the ham without all the pineapple and sweet stuff.
The best is yet to come!

Take the leftover ham on the bone, slow cook it with pinto or tepary beans, garlic, red chili powder, oregano and onions. Take out and strip the bone, returning the meat to the pot. Adjust spices, cook a while longer. Serve with a good bread and good Mexican Beer.
